Surviving Quarantine Let’s be honest, there is a lot going on right now, it’s hard for us adults to comprehend let alone for the kids to get their heads around. Surviving Quarantine, it sounds directly out of a movie! I have never homeschooled I have never homeschooled my children before, so it’s a little scary to think that they may be home for a few months and missing vital time in the classroom. My children’s schools have provided work for them to do, and having such a vast age difference in my children, year 11, 9 and 5, I was worried how I was going to be able to cover such a wide curriculum. But now I have had time to process and understand the situation I am no longer concerned about being the best teacher I can be, because I am not a teacher I am their mum. Cornflake Cookies Cornflake cookies make me think of my childhood. They are a classic biscuit and I’m always on the hunt for things to add into my kids lunch boxes. The kids have just gone back to school and making lunch boxes is not my favourite thing to do. I always find it a challenge to make everyone happy in the snack department, especially snacks that do not come out of a packet. I’ve been trialing some new recipes and this Classic Cornflake Cookie recipe is a winner. Ingredients: 125 grams of softened butter 1/3 cup brown sugar 1 egg 1 cup Self Raising flour 1 cup of sultanas or cranberries 100 grams of chocolate chips 2 cups of Cornflakes Method: Pre heat the oven at 180 degrees and line a baking tray with baking paper. Place the butter and brown sugar into a mixing bowl and cream until the ingredients are light and fluffy. Add the egg and mix thoroughly. At this point you can mix in any ingredients you wish to add such as the sultanas, dried fruit, or even chocolate chips. I’ve been quiet on here. It started about a month ago, the worry began to set in and the fear grow. Usually my son has an MRI every 6 months to a year. Our Neurosurgeon gave us a reprieve and it has been two years since his last MRI, but gosh that two years went fast! (If you are new here, you can catch up on a previous post here – https://www.countingstars.com.au/2018/06/the-day-i-became-a-carer/ ) Really, I have remained very positive and getting on with my days. However the effects of the last few weeks have become apparent because my subconscious brain has been on high alert and working overtime. Consciously I can make myself slip into a mindful mode, getting on with everything day to day, hour by hour, minute by minute, but subconsciously after a period of time its like my conscious brain catches up to what is going on in the back ground. I’m not sure if I’m making sense or if this is technically right but that is how I feel, and I feel exhausted. A visit to the Bribie Island Butterfly house is a must if you visit the Northside of Brisbane. Situated on Bribie Island, it is a lovely day out, and combining your visit with a walk along the beach and lunch will fill in your morning or afternoon beautifully. Butterfly house has now been in operation for just over a year and on a sunny day you can expect to see up to 100,000 butterfly’s taking flight. A community project aimed at increasing the butterfly population on Bribie Island, their goal is to bring people together with a love and interest of butterflies to this not for profit tourist destination, with all profits given to charity. We have had the privilege to visit the butterfly house at Coffs Harbour as well, and although the Bribie Island house is not as big, it is just as beautiful. An ideal place to learn all about the different species as well as see the lifecycle of butterflies in action. An hour to an hour and a half is all you need to visit the butterfly house, it is lovely just to sit and watch quietly. It is also an ideal spot to get magical […]
Living the Invisible After diagnosis, we spent a few years getting my sons medication right. He was having daily seizures and so he was on anti-seizure medication for a few years, some worked for a time and then they would stop so his neurologist team would increase the dose or add new medications. There was a time when he was on three anti-seizure meds twice a day, and these still did not work. When my son started preschool he was drugged out, he was unable to retain information or learn. We were at the hospital emergency department every other day, and it was at one of these visits that I suggested to the team what would happen if we took him off all medication and just carried an emergency medication? Luckily one of the neurologists agreed and decided to give it a go. He has not been on anti-seizure medication since. We carry emergency medication where ever he goes, in case, I know we are lucky, other children are not as lucky. He still has seizures however the most common type tends to be absent seizures which are hard to medicate. We are very lucky that the other types of […]
