Cornflake Cookies Cornflake cookies make me think of my childhood. They are a classic biscuit and I’m always on the hunt for things to add into my kids lunch boxes. The kids have just gone back to school and making lunch boxes is not my favourite thing to do. I always find it a challenge to make everyone happy in the snack department, especially snacks that do not come out of a packet. I’ve been trialing some new recipes and this Classic Cornflake Cookie recipe is a winner. Ingredients: 125 grams of softened butter 1/3 cup brown sugar 1 egg 1 cup Self Raising flour 1 cup of sultanas or cranberries 100 grams of chocolate chips 2 cups of Cornflakes Method: Pre heat the oven at 180 degrees and line a baking tray with baking paper. Place the butter and brown sugar into a mixing bowl and cream until the ingredients are light and fluffy. Add the egg and mix thoroughly. At this point you can mix in any ingredients you wish to add such as the sultanas, dried fruit, or even chocolate chips. Banana Bread Banana Bread is my sons favourite snack. He is always asking me to make it, and so I have tried many recipes. I have now modified my own take on the traditional Banana Bread to reduce the amount of sugar. I use honey and applesauce to add sweetness and make the bread less dry. Using a variety of different fruits adds to the flavour and it is a hit with my kids. It’s a great snack to have quickly when running to appointments or after school. Warmed in the microwave is lovely, we don’t tend to put butter or any spreads on it, but of course you could if you wanted to. Ingredients 2 cups of whole-wheat flour 1 teaspoon of baking powder 1/4 teaspoon of salt 1/2 of unsweetened apple sauce or apple pieces stewed if you have no prepared sauce. (I use the water and all) 3/4 cup of honey 2 eggs 3 overripe bananas Hand full each of strawberries, blueberries and raspberries. Or I use frozen fruit if I don’t have them fresh. It’s the first day back at school today and I made up a batch of my kids favourite cookies for afternoon tea and treats for the week. My husband and son love jam drops and my two daughters love chocolate chip. This cookie recipe is so delicious. It is such a great starter base and you can add anything you like such as chocolate chips, jam, chocolate drops, freckles and any other combination you can imagine. They are quick to whip up and are a sure hit. I really don’t like buying cookies, I tried many different recipes until I found one I was happy with. Making my own I know exactly what is in them, and this recipe can be modified to a healthier version using wholegrain flour or omitting the sugar for honey and they still work just as well they are just a softer biscuit. With the winter chills well and truly here in Queensland, Australia I have decided to try some soups out on my family this year. When I went back to work full time after my first child was born, my husband ended up taking over a lot of the cooking in our house hold. Being a busy family and over time we have become a family of set meals most weeks, we have steak night, roast night, BBQ night, spag bowl night. Of course, during the colder months, we start having more curry’s and casseroles, but we really haven’t been a family for soups. So, this winter I decided to try out some soup recipes and what better soup to have in your favourites but a chicken noodle soup.
