Cornflake Cookies
Cornflake cookies make me think of my childhood. They are a classic biscuit and I’m always on the hunt for things to add into my kids lunch boxes. The kids have just gone back to school and making lunch boxes is not my favourite thing to do. I always find it a challenge to make everyone happy in the snack department, especially snacks that do not come out of a packet. I’ve been trialing some new recipes and this Classic Cornflake Cookie recipe is a winner.
Ingredients:
125 grams of softened butter
1/3 cup brown sugar
1 egg
1 cup Self Raising flour
1 cup of sultanas or cranberries
100 grams of chocolate chips
2 cups of Cornflakes
Method:
- Pre heat the oven at 180 degrees and line a baking tray with baking paper.
- Place the butter and brown sugar into a mixing bowl and cream until the ingredients are light and fluffy. Add the egg and mix thoroughly.
- At this point you can mix in any ingredients you wish to add such as the sultanas, dried fruit, or even chocolate chips.
- Roll the mixture into a ball and roll them in a separate bowl with the Cornflakes covering the biscuit mixture.
- Bake for 15-20 minutes or until brown and cool on a wire rack. Store in a airtight container.
