Banana Bread
Banana Bread is my sons favourite snack. He is always asking me to make it, and so I have tried many recipes. I have now modified my own take on the traditional Banana Bread to reduce the amount of sugar. I use honey and applesauce to add sweetness and make the bread less dry. Using a variety of different fruits adds to the flavour and it is a hit with my kids.
It’s a great snack to have quickly when running to appointments or after school. Warmed in the microwave is lovely, we don’t tend to put butter or any spreads on it, but of course you could if you wanted to.
Ingredients
2 cups of whole-wheat flour
1 teaspoon of baking powder
1/4 teaspoon of salt
1/2 of unsweetened apple sauce or apple pieces stewed if you have no prepared sauce. (I use the water and all)
3/4 cup of honey
2 eggs
3 overripe bananas
Hand full each of strawberries, blueberries and raspberries. Or I use frozen fruit if I don’t have them fresh.
Method
Preheat oven to 180 degrees. Lightly grease a loaf pan, you can line it but I find it doesn’t stick. In a mixing bowl, combine all the ingredients. I don’t bother separating dry and then wet ingredients. I just combine it all and mix well, it is a no fuss recipe.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack to cool.
So give it a go, It doesn’t last long in our house, I keep it on the bench and it is gone in 3 days. Or if you kept it in the fridge it would probably last 5 days. It would be fine to freeze as well.
